To celebrate National Grilling Month I’d like to share with you 3 of my family’s favorite meals on the grill!

 

Doritos Cheeseburgers

Burgers are a big hit any time of the year, but when you fire up that grill on a beautiful summer evening there’s just something extra special about cheeseburgers!

We take about 2 pounds of hamburger and add in about a cup of crushed Doritos chips, (cooler ranch is my favorite), chopped onions, and a little bit of worcestershire sauce; mix it all together, form about 6-1/3 lb. patties and then grill, add sliced cheese when almost done cooking. Top with fresh condiments of your liking, lettuce and a tomato slice and you have a great burger!

 

My next one I had found on Pinterest and is now my “go-to” for chicken on the grill:

Grilled Chicken

  • 3 medium cloves garlic, minced (about 1 tablespoon)
  • 3 tablespoons minced fresh rosemary
  • 2 tablespoons fresh juice from 2 lemons
  • 6 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 4 boneless, skinless chicken breasts (5 to 7 ounces each), slice into 8 cutlets 

Whisk together garlic, rosemary, lemon juice, and olive oil in a large bowl. Season to taste with salt and pepper. Transfer half of mixture to a separate container and set aside. Add chicken to the large bowl and turn pieces to thoroughly coat.

Place chicken directly over the hot side of the grill, cover, and cook, rotating the pieces occasionally (but not flipping them), until the chicken is almost completely cooked through and only a few pink spots remain on the top side, about 4 minutes. Flip chicken and cook on second side until just done, about 30 seconds. Transfer to a serving platter. Re-whisk reserved marinade and pour it over the chicken. Serve immediately. We like to have a nice fresh salad or a pasta salad with this one!

Hot Dog Bar

Then another wonderful kid and adult friendly one is…. Hot Dogs! 

Don’t get me wrong, they are not my favorite meal of all time, I normally prefer a nice Wisconsin brat over a hot dog, but you can have a lot of fun with grilled hot dogs with different toppings! 

Try a “hot dog bar” at your next summer BBQ: Start out with quality (brat sized) bakery buns and grilled hot dogs, then an important step is to cut them in half so your guests can have mini hot dogs to be able to sample more of the different varieties without getting full too quickly! 

Some ideas I’d suggest: Chili cheese dogs (Chili, shredded cheese, chopped onions) Taco Dog (Refried beans, pico de gallo, guacamole, and taco blend cheese), Chicago Dog (Diced sweet pickles, dill pickle spears, diced onions, tomato wedges, and yellow mustard) and a family favorite Mac and Cheese Dog that’s basically just that simple; add mac and cheese sometimes with ketchup too.
